Omelettes

Today was my egg run day. I go to the egg farm supplier in a nearby town from work and get the freshest eggs at a significantly reduced price. Up until a few weeks ago, I could get jumbo brown eggs which are so yummy, but right now they are out, so I get the extra large white eggs. And of course, when you have fresh eggs in the house, it must mean it's omelette night! A little diced ham, thinly sliced onion, and chopped mushrooms all sauteed up and then put into the center of omelettes with pre-shredded "pizza" cheese and you have dinner in about 20 minutes.

Even eggs bought in the store are a reasonably cheap basis for a great meal, which has been enjoyed for hundreds of years around the world. The basic omelette is simply eggs with a little seasoning, cooked and folded so they are either half moon shaped or burrito-like, and fluffy. They carry the flavor of the egg and are good with a piece of toast. Fill them and you have any number of flavors and meals to hand. You can serve them for breakfast, have a light lunch, serve them for a quick dinner, make them into dessert, or throw them together after the opera, theatre, or bar. Toast, fried potatoes, heated flatbreads, or a more traditional salad with an olive oil and lemon dressing are all good accompaniments. For the adults, serve with a glass of wine (red or white go well), and milk or juice for the kids and teetotalers.

Whatever you fill them with and whatever goes with them, omelettes are a perfect quick, healthy, delicious meal.
