Breakfast or Brunch?
I know the popular idea is to have a light breakfast on Saturday and then have a more leisurely brunch on Sunday. However, on Sundays in my house, we're trying to get up, dressed, and out to church. A nice early lunch is welcome after the service, but to have or make brunch is always kind of a hassle. So I make brunch on Saturdays, which allows us to do what we want the rest of the morning and midday, and then we can come back together around 3 or 4 in the afternoon and have a nice large tea. When we do this, it makes the weekend special and relaxing.
This morning was really good! I wanted to make brunch, since I have been very lax in doing that lately. I had some bread I wanted to use up, so I sliced it and then thought, French toast would be good. But that's so boring if that's all you make, so I found some sausages and cooked them. Then I whisked eggs and milk together and dipped the bread. I cooked it on a griddle (no fat added!). What made it really special was I had some fresh raspberries to serve alongside.
Some other good brunch ideas are grilled bacon and egg sandwiches with fruit salad, cheese and onion pie with strawberry spinach salad, pancakes with eggs and sausage and grapefruit, and southern biscuits with sausage gravy and oranges. Any of these ideas can be mixed and matched, and doing a lot of this out of the grill can add to the family fun in the spring and summer.
Whatever you do, and whatever day you do it, try treating even just yourself to a nice leisurely brunch!
