Birthday Dinner

I remember one of my favorite meals as a child was my mother's soft tacos. I will be making them for our dinner tonight, as it's my birthday and I want a treat!

First you brown and season ground meat with whatever Mexican seasoning you like; then you set it aside and get a pan with a little bit of oil heated in it. Have on hand corn tortillas, shredded cheese, shredded lettuce, chopped olives (optional), and chopped tomatoes (also optional). Put a corn tortilla into the hot oil, let soften a few seconds, add a spoon or so of meat and fold in half. This can be trickier than you think as the tortillas harden faster than you expect! Turn and fry on second side and remove to paper towels. Add shredded lettuce, cheese, tomato, and olives. Add some taco or picante sauce and enjoy!
